Known as kefir cheese, it was found on the heads and necks of Xiaohe people mummies. Analysis revealed it contained genetic material from cows and goats, highlighting ancient dairy practices.

This showed that the Xiaohe people used differing types of animal milk in separate batches, in contrast to the mixing of milk types common in Middle Eastern and Greek cheesemaking.

Interestingly, the Xiaohe people were genetically lactose intolerant, yet they consumed dairy products prior to the development of pasteurization and refrigeration.
